  • 1 tbsp. Sriracha
  • 1 avocado, sliced
  • 1 cucumber, sliced
  • 4 sheets of nori (dried seaweed)

Instructions:

  1. Rinse the sushi rice several times until the water runs clear. Drain the rice and place it in a saucepan with 1 1/4 cups of water. Bring to a boil, then reduce the heat to low and cover the pan with a lid. Cook for 18 minutes or until the rice is tender and the water has been absorbed.

  2. While the rice is cooking, prepare the sushi vinegar. In a small saucepan, combine the rice vinegar, sugar, and salt. Heat over low heat until the sugar has dissolved. Remove from the heat and set aside.

  3. In a small bowl, mix together the drained tuna, mayonnaise, and sriracha.

  4. Once the rice is cooked, transfer it to a large mixing bowl. Add the sushi vinegar and mix well using a rice paddle or wooden spoon.

  7. Using the sushi mat, roll the nori sheet tightly around the filling, tucking in the edges as you go. Wet the top border of the nori sheet with a little water to seal the roll.
